Flavour combinations: Curried cauliflower crunch

This simple recipe includes an unusual ingredient from our salad bar: coronation cauliflower. It’s made up of cooked cauliflower, potato and raisins in a mild curry mayonnaise – and here we combine it with sweetcorn and red onion for a blend of sweetness and acidity. The result? A delicious main meal that’s packed with flavour.

Ingredients (serves one)

  • ½ iceberg lettuce, sliced
  • ½ red onion, sliced
  • ½ tin sweetcorn
  • 1 grated carrot
  • 2 heaped tablespoons coronation cauliflower salad
  • 8 olives
  • Sprinkle of dried onion flakes

Method

1. Start with a bed of fresh lettuce.

2. Add the red onion for acidity and bite, followed by the grated carrot and sweetcorn.

3. Add the coronation cauliflower. No extra dressing is needed – the lightly spiced mayonnaise adds enough punch and texture.

4. Sprinkle a handful of olives on top for some natural saltiness, and finish with the onion flakes.
